This has been a winter favorite for years. Requested for pot lucks and the winner of every chili-off I've ever entered it in.

I agree with Kajun, this is the best recipe for white chili I've ever found. I add a few other spices like lemon pepper. I've served it at Christmas parties, and always am asked for the recipe. When in a hurry I use rotisserie chicken from the grocery store. I chop it and sautee it with onion/garlic then pour in the stock, beans and seasoning. Very fast, simple and satisfying. I'm eating it for lunch right now!

Quick, easy, and a family favorite. It's much better than any recipe that uses packaged chili seasoning, allowing you to adjust the individual spices to your taste. I usually substitute Great Northern beans for the cannellini, as the Great Northerns have a better flavor, and are more readily available in this region.
